Rhubarb and Banana Pie

Can be eaten hot or cold.

This is one of those dainties where the banana is much improved by the addition of some other fruit. Butter the inside of a piedish and sprinkle it thickly with breadcrumbs. On this layer place a little finely-minced suet, some more breadcrumbs and pieces of rhubarb about an inch long. Now add a layer of sliced bananas and Demerara sugar, and repeat until the dish is full, letting the top layer be of chopped suet. Cover with buttered paper and bake in a moderate oven for about 40 minutes. Turn out carefully on to a hot dish and sprinkle with castor sugar. Can be eaten hot or cold.
