Whipped Cream Substitute

From 1922:

Press a ripe banana through a sieve, then add juice of half a lemon, a large tablespoonful of sugar, and a pinch of salt. Whip the white of an egg till very stiff, and add this to the bananas.
This makes a nice filling for cakes.
