This is not at all complicated to make, and the home-made variety is delicious.
Required: 1 oz. gelatine. ¾ teaspoonful tartaric acid, 2 breakfast cupfuls of castor sugar, ½ teacupful of cold water, ¾ cup boiling water, 1 teaspoonful vanilla essence, juice of lemon, a little carmine for colouring. Soak the gelatine in the cold water for two hours. Put sugar in boiling water, and boil for seven minutes with the tartaric acid. Add lemon and pour over gelatine. Stir well and add the essence.
Pour in prepared plates.
