Beat ½ lb. of castor sugar and 4 oz. of butter to cream; add 1 egg well beaten; gradually sift in 1 lb. of sifted flour.
Mix all well together, then turn out on a board and cut in rounds.
Bake in a moderate oven till pale brown.
