This recipe is in season during the fall.
For one bushel of sweet apples use one gallon of boiled cider; put the cider into a porcelain boiler; peel, core, and wash the apples, put them into the boiler, cover tightly, and cook slowly over a fire a long while; do not stir them while boiling. This is fine.
