QUICK, GOOD YEAST

Put on aluminium saucepan with quart boiling water; then get a good pinch of hops (as much as you can hold in your four fingers) and the same of bran. Boil for 20 minutes, then stand aside until just warm. Get a quart bottle and one potato; wash and cut it up in small pieces; put into bottle with two tablespoonfuls sugar; strain yeast, and pour into the bottle; shake well, set aside. Made in the morning, it is ready to set at night if kept in warm place.
