This may be used for pickling the tiny red cherry tomatoes. Select tomatoes that are ripe but firm. To four quarts of them you will require six blades of mace, a teaspoonful of whole cloves, a little allspice, four tablespoonfuls of sugar, half a dozen chillies and good cider vinegar. Wipe the tomatoes and lay them in jars interspersing them with the chillies. Add the sugar and spices to the vinegar, and fill the jars to overflowing. Do not heat the vinegar, as this would tend to soften the tomatoes. If made as directed, they will remain firm and plump. They must be tightly sealed and kept in a cool dark spot until required for use.
