ORANGE SPONGE CAKES

Take 2 eggs, weight of same in butter, sugar, and flour, ¾ teaspoonful baking powder, rind of 1 orange and half the juice. Cream butter and sugar, add the eggs, flour and orange juice, and rind. Put the mixture into small tins, and bake in fairly quick oven. Cut a small piece out of the centre of each. Fill with whipped cream and replace tops.
