MINCEMEAT (a recipe poem)

Peel and cut up first of all

From 1922:

Peel and cut up first of all
Half a pound of apples, add
Half of raisins, chop them small,
This is not an idle fad;
Dark brown sugar sweetens best,
So use some of this, and yet
Sparingly (4 oz.) lest
‘Tis too sweet ; then don’t forget
Half a pound of currants, spice,
4 oz. suet is enough,
1 oz. candied peel is nice
Finely sliced, or it is tough—
Thus, when mincemeat’s needed, make it,
Put it into pies and bake it !
