Liver and Bacon

Slice liver in small pieces, soak in cold water fifteen or twenty minutes, drain and roll in flour. Have the pan very hot, put in bacon, fry till brown and remove to hot platter. Fry liver in the hot fat, when done, turn off all the fat but two tablespoonfuls, after removing the liver, stir one tablespoon flour into the fat till smooth, adding a little boiling water to make the right consistency. Serve gravy separately.
