Lemon Cheese

Take ¼ lb. butter, ½ lb. loaf sugar, 6 eggs, rind of 2 lemons and juice of three. Place all ingredients into a stewpan, first carefully straining the juice of lemon and grating rind. Keep stirring mixture over the fire until it thickens to the consistency of honey. Use upon crusts for tarts. If properly made it will keep for weeks in a jar.
