Lemon Barley Water

Take 2 tablespoonfuls of pearl barley and ¼ lb. of lump sugar

From 1894:

Take 2 tablespoonfuls of pearl barley and ¼ lb. of lump sugar.
Pour on it rather more than 2 quarts of boiling water.
Add the peel of a fresh lemon.
Let it stand all night, then strain, and it is ready for use.
This is both a cooling and a healthy drink.
