Take 2 apples, 2oz. currants, 2 tablespoonfuls golden syrup, spice, and a little grated lemon rind. For the crust use ½ lb. of flour, ¼ lb. beef suet, and a pinch of salt. Make the crust in the ordinary way by chopping the suet finely, then mixing it with the flour and salt and a little cold water to make it into a paste. Roll the crust out to an oblong shape, then spread the ingredients on to it within half an inch of the edge of the crust. Roll it up, pressing the sides together as you roll. Tie in a floured pudding cloth, and boil for an hour and a half.
