Indian Chutney

From 1922:

1 lb. sugar made into a syrup. ½ lb. salt, ½ lb. garlic, peel and slice, 1 lb. green ginger, ½ lb. Dried chillies, ½ lb. mustard seed, to be bruised. ½ lb. raisins, 1 bottle vinegar, l doz. or more, according to size, of sour apples, to be peeled and sliced and boiled in the syrup, put aside about ¾ bottle vinegar to cool, then add the salt, mustard seed, garlic, ginger and chillies; gradually stir in the remainder of the bottle vinegar, boil six hours or longer.
