Six pounds ripe tomatoes, 1 lb. brown sugar, 2 pints vinegar, 3 lb. Apples, 1 lb. Onions, 1 oz. Chillies, 2 oz. whole ginger, 2 oz. Salt, 2 oz. garlic.
Dip tomatoes into boiling water and cut them, cutting into small pieces. Peel apples and cut them the same size, and chop onions and garlic and chillies very fine. Boil all together for six hours, stirring well occasionally to keep from burning, and strain.
