Yeast:
Boil a small pinch of hops in 1 pint of water for 15 minutes. When cold mix one tablespoonful each of flour and sugar into the hop water, then put into a bottle and cork tight, and leave to work. The morning before mixing your bread over night, mash one cooked potato and put into yeast bottle.

Bread (to make four loaves):
Toke 12 cupfuls of plain flour, make a hole in centre, and add two tablespoonfuls salt and then yeast and enough warm water to make nice, thick dough. Work well and put in a warm place to rise. When risen break down and put in to bread tins and leave to rise again. When risen bake in a moderate oven one and a half hours.
