Fried Chicken

serve very hot.

Wash the chicken and cut into neat pieces, sprinkle with pepper and salt and fry quickly in hot fat. When done, remove to hot plate, and make gravy with remaining fat in frying pan to which has been added a small quantity of boiling water and thickened with a tablespoon of flour, add to this two drops onion and three drops celery extract, salt and pepper, pour over chicken and serve very hot.
