From 1922:
Melt in a saucepan 1 ½ oz. butter, stir till quite smooth 2 oz. flour and add gradually 3 gills milk, stirring constantly. Let it boil for three minutes, then pour the mixture into a basin and add to it 1 oz. sugar and ½ teaspoonful of vanilla. Beat in 2 yolks of eggs to a stiff froth and stir lightly in. Put a thick layer of stewed apples in a pie dish, pour the batter over, and bake for 40 minutes. Beat the whites of eggs to a stiff froth and lay on top till nice and brown.
