Dolly Varden Cake

Take 1 cupful sugar, 1 tablespoonful

Take 1 cupful sugar, 1 tablespoonful butter, 1 tablespoonful dripping, ¼ cupful milk, 2 eggs, 1 teaspoonful soda, 2 teaspoonfuls cream of tartar, 2 cupfuls flour, ½ cupful raisins, ½ cupful currants, a little lemon peel, essence and spice. Beat butter and sugar to a cream, add eggs well beaten, then milk; mix in flour in which soda and cream of tartar have been mixed; divide into three parts; bake all separately. When nearly cold put a layer of icing between each cake, the fruit part being in the centre.
