Three-quarters of a pound of sugar, ¼ lb. salt, ½ lb. onions, ¼ lb. preserved ginger, ½ lb. Raisins, 3 lb. Apples, 1 oz. mustard, ¾ lb. Dates, 1 oz. ground ginger, 3 large tomatoes, 3 pints vinegar, cayenne pepper to taste. Boil vinegar and apples (peeled and cored), mustard, cayenne and salt: then put in a large basin, adding chopped raisins, onions, and all other ingredients.
