Cherry Jam

Kentish cherries make the best jam

Stone the cherries and weigh them. Allow equal weights of sugar and fruit. Put the cherries into the preserving pan, sprinkling each layer lightly with sugar. Leave them all night. Next day heat gently till the sugar is dissolved, then boil up. Add the rest of the sugar gradually and boil till the jam nearly sets when tested. Kentish cherries make the best jam.
