From 1922:
Take 4 oz. of grated cheese, 1 oz. grated onion, 1 egg, 1 oz. Flour, 1 oz. fine breadcrumbs, 1 cupful milk, pepper and salt.
Blend the flour, pepper, and salt with a little milk, put the remainder into a saucepan and bring to the boil. Pour over the flour, stirring well, return to the saucepan and boil for three minutes, stirring all the time. Pour over the breadcrumbs and when cooled a little, add the well beaten egg, cheese, and onion. Pour into pastry-lined patty tins, and bake in a hot oven about 15 minutes.
