Beetroot Jam

This is rather uncommon, but very nice. Take 6 bunches of beetroot, 4 lemons, 3 lb. of sugar, ¼ lb. of almonds, and 1 oz. of ground ginger.
Peel and cut up the beetroot into squares; slice the lemons.
Blanch and quarter the almonds, and cover all with water.
Put it on the fire, and when boiling add the sugar and ginger.
Cook till nice and thick.
