Here is the recipe of a well-known effervescing drink made with apricots, which is much used in India. Pineapple or other fruits may be substituted if preferred.
Bruise a sufficient number of apricots to make 1 pint of juice, which must be strained or filtered until quite clear. Make into a syrup with ½ lb. of sugar, then add 1 oz. tartaric acid, bottle and cork well. To a tumbler three parts full of water add two tablespoonfuls of the syrup and a pinch of carbonate of soda. Stir well, and drink while effervescing.
