Apple Chutney

From 1922:

Take 6 lb. Apples (cored, not peeled), wine-bottleful vinegar, 1 lb. coarse sugar, 1 lb. stoned and chopped raisins, 1 oz. ground ginger, 1 oz. Allspice, ½ oz. cayenne, ¼ lb. Salt. Boil fruit with sugar and vinegar until soft. When cold, add other ingredients, mix all well together and put into jars. Keep six weeks before using.
