Put through a mincer any remains of cold meat and 1 onion, and add some breadcrumbs (about half the quantity of minced meat), a little chopped parsley, and season to taste. Beat up 1 egg with a little stock, and mix thoroughly. Well grease a basin or pie dish, coat it with breadcrumbs, put in the mixture, press well down, and bake in a moderate oven until nicely brown; turn out, and serve with gravy or tomato sauce.
