MUSHROOM KETCHUP

Pick carefully any nice mushrooms

Pick carefully any nice mushrooms, wash and drain for 2 hours, then put them in a dish with skins or sprinkle with salt and break them up. Let them stand all night, then drain out all the moisture through a colander, and add 1 teaspoonful of cloves, 1 teaspoonful of allspice and 1 teaspoonful of whole pepper to every pint of liquid. Boil 20 minutes and strain through a fine strainer.
